Ciabatta—meaning “slipper” in Italian—is a rustic white bread with a thin, crispy crust and an open, irregular crumb structure. Made with a very wet dough, which is what gives it that airy texture. Great for sandwiches or dipping in olive oil.
Focaccia is a flat, oily Italian bread with a soft, pillowy interior and a golden, slightly crispy crust. It's drizzled generously with olive oil and dimpled before baking. This bread is offered in a variety of toppings such as rosemary and olive oil, sliced tomatoes, and even grapes with honey.
Fougasse is a traditional French bread that is flat and uniquely cut in a ladder pattern. The crust is crispy and the inside—flavored with Calamata olives—is soft and chewy. Fougasse was originally conceived as a bread to be “torn apart and shared.”
